Last night I decided to make coconut milk chocolate ice cream. It turned out very tasty, and tastier than the mint chocolate chip ice cream we tried making last weekend from coconut milk. It is rich and chocolaty. It tastes just like real ice cream, with a small hint of coconut. I doubt I would notice the coconut flavor if I didn’t already know it was made from coconut milk already.
This dessert is paleo. It is dairy free and also free from refined sugars. I took an interest in paleo after suffering from some health problems last year. I thought it would be a good idea to make some paleo desserts because that way, I would be able to keep baking, creating and eating, with out sacrificing dessert.
There are a few things I like about this dessert. One of them being that it is cheap to make. It doesn’t have nut butter, coconut butter, and coconut oil . . . all of which if you bake paleo often, you could be using quite a bit of, which wouldn’t be cheap. Another thing I like about it is that it is healthy, relatively. There is no refined sugar in this recipe. Instead is uses raw honey which is good for you. Raw honey doesn’t spike your blood sugar and is low on the GI. Coconut milk is also very healthy for you, too. Some people might be worried about the fat content of coconut milk, but it’s actually a good fat that your body can use. It is antiviral, antibacterial, and anti-fungal in nature . . . and a whole lot better for you than dairy.
To make this recipe you combine:
1 can of coconut milk
1/4 cup of honey
a little over 1/4 cup of cocoa powder
1 tsp of vanilla extract
Put all the ingredients in a blender and blend until combined. You could then put it in an ice cream maker, or if you don’t have an ice cream maker like us, just put it in the freezer and stir it every half an hour for a few hours until it looks like ice cream.
