Buche de Noel



We made a buche for Christmas!  We used a flourless cake recipe, which we found here.  Instead of using cream for the frosting, we used coconut milk because it is a lot healthier and you can’t notice the difference by substituting it for cream in this case.  The cake already has a lot of sugar, so we didn’t want to necessarily add more by using dairy – especially if the two of us would be the only ones eating it.  We decorated it using Oreos for dirt, coconut for snow, and some different little branches we found in the neighborhood.  Overall it turned out freaking awesome, and it tasted great, too!
