Dried persimmons are on sale these days, so I decided to make sujeonggwa.  Sujeonggwa is a Korean tea made from ginger, cinnamon, sugar (I used raw honey) and dried persimmons.  It is quite spicy, but very pleasant to drink and can be served hot or cold. Normally, I think it’s served cold as a kind of dessert or something refreshing after a meal.  I followed Maangchi’s recipe here, and just substituted raw honey instead of sugar.  It turned out sweet and warming.  If you don’t have dried persimmons, you can go ahead and make it without them, and it should be just as tasty 🙂
